What constitutes healthy eating these days, the answer? No sugar. How easy is it to have NO sugar? Really bloody hard. My whole life it’s been eat dinner, have pudding. Taking away the eat pudding is like getting in the car and not putting a seat belt on, it just feels WRONG. I have been on a mission to find recipes that are somewhat not terrible for you, and here is my current go to. The ingredients are puffed rice cereal, cocoa powder, desiccated coconut, maple syrup and coconut oil. All of these ingredients are either already healthy, or can be sourced as sugar free versions or from health food stores, so you can make an even healthier version of this if you want. Even if you don’t, there is still minimal sugar in puffed rice and maple syrup.
Ingredients:
- 2 3/4 cup puffed rice cereal
- 1/2 cup desiccated coconut
- 1/3 cup coconut oil
- 1/3 cup unsweetened cocoa powder
- 3 tbsp maple syrup
- In a bowl, mix your cereal and coconut.
- Line a cake tin or baking dish with baking paper.
- Add the coconut oil, cocoa powder and maple syrup to a medium saucepan and melt over a medium heat until your coconut oil is melted and your mixture is smooth.
- Combine everything together and mix well.
- Pour your mix into your baking dish and place into the fridge to set.
- Once completely set, cut your slice into squares.
This recipe takes about 10 minutes to make, plus an hour or so to set. This has been a great option to reduce my sugar intake, but still get my sweet treat!
